Job DescriptionFusion Recruitment are currently working with one of our hotel partners in Clare to recruit a Sous ChefThe successful candidate will be:Responsible for the running of the kitchen in the absence of the Head ChefMaintain purchasing, receiving, and food storage policies and proceduresAssist the Head Chef in ensuring that the highest quality food is produced for the customers and that it is presented with flair and passionEnsure cleanliness of the kitchen is in line with Food Hygiene Regulations and all Health andWork with the Head Chef to generate ideas in the kitchen, to update menus regularly and to produce a consistently good productAssist the head chef in training and developing the kitchen teamCooking and preparing high-quality dishesSupervising all kitchen stationsDirecting the food preparation process, delegating tasks, and ensuring a smooth service in the banqueting kitchensSupervising, motivating, and working closely with other chefs of all levelsAssisting with determining food inventory needs, stocking and orderingSupervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating orderThe Ideal Candidate should have:A minimum of 3 years experience in a similar role in a 4- or 5-star hotelStrong knowledge of HACCP principlesThe ability to produce a high standard and high quality of foodHardworking, trustworthy with a positive attitude. Experience in Conference & Banqueting is essentialExcellent People management and leadership skillsFluent English is essential
