You will provide specialist strategic support to the service in relation to special diet provision, menu planning and provision, food safety and food safety management systems, training, quality assurance and food procurement.It’s not just about feeding the children of Leeds, it’s about providing inclusive meal options that are prepared fresh with a safe, healthy and tasty choice for everyone.About youAs a Nutrition and Food Safety Manager, you will bring to the role:Ability to work with a wide range of partners and stakeholders including headteachers, children and families, health professionals, Children’s Services and other Council services such as Environmental Health.An understanding of the demands of a high volume catering service and the risks associated with this.Expertise and experience in relation to all aspects of dietary needs and food safetyCommitment to raising standards and awareness for all aspects of food safety, special dietary provision and the procedures associated with this.Excellent organisational and communication skills both in person and in writing with theKnowledge and experience of food manufacturing, full product specifications to be able to compile, maintain and update product specification database to enable the approval of product specifications and labelling.High level awareness of all aspects of food safety management systems with the ability to write, maintain and implement these.About the roleAs our next Nutrition and Food Safety Manager you’ll have a desire to seek continual improvement, both personally and for your wider team’s working area. You’ll provide day to day support to Catering Leeds stakeholders, including front line staff to assist them in everything they do in relation to special diets and food safety. As well as what has been listed above, you’ll assist in the development of menus, ensuring these are in line with Government guidelines. You’ll work alongside our Business Builder Teams and with the wider Food Technology Team to establish exact resource requirements to strengthen and improve all aspects of food safety. You’ll get involved in training and providing advice to chefs and cooks on how to provide safe and inclusive catering provision. If you do not have the right to work in the UK and the role does not meet eligibility for sponsorship, please consider carefully whether you meet the eligibility to apply.Job DescriptionJob purposeTo provide specialist strategic support to the service in relation to city wide special diet provision, menu planning and provision, food safety and food safety management systems, training, quality assurance and food procurement.ResponsibilitiesHave the knowledge and ability to implement and provide specialist medical and cultural diets and dietetics services to meet the needs of early years and school aged children.Work in direct contact with education establishments, schools, parents, health professionals and GP’s.Maintain and develop an effective special diet database to provide easy access and information to the special dietary requirements for the children city wide. Utilise KPI data to demonstrate compliance and progress.To plan and distribute termly menus for all schools and children’s centres, ensuring all menus are compliant with legislative requirements and are cost effective and that all stakeholders needs are considered and managed appropriately.Work with health professionals, GP’s, families and children to maintain good health practices through nutrition.Provide expert and strategic advice in food technology, food and product safety and nutrition to Catering Leeds and provide detailed reports.Design and develop nutritionally balanced education menus for schools, children’s centres and SILC’s in line with current government legislation, using specialist software package.Work directly with headteachers, teachers, school councils, area team members and Catering Team Leaders in the development of bespoke and nutritionally balanced school menus.Ongoing working knowledge and experience of Food for Life Partnership.Ability to provide a seamless transition and implementation into designated schools and maintain level of accreditation.Ongoing working knowledge and experience of food manufacturing, full product specifications.Compile and maintain and update product specification database.Check and approve product specifications and labelling.Strategically work with suppliers maintaining; quality, product and supply chains.Review food supply, security and sustainability.Utilise a suite of KPI’s to demonstrate team activities and progress across all areas.Work with suppliers and procurement unit in the sourcing of new products, researching current consumer markets in line with contractual agreements.Run trials of new products alongside existing lines.Work with service and procurement unit in the writing and technical details of food tenders, product evaluation and supplier review.Provide technical and strategic information in relation to all food safety matters, relevant legislation and documentation. Review end to end supply chains.Manage the safety, legality and quality of food produced.Write, maintain and implement food safety management systems i.e. HACCP.Work with Environmental Health Officers in relation to food safety issues, monitoring and testing. Co-ordinate and provide reports on food alert investigationsDevise, implement and maintain non conforming products procedures.Work directly with supplier’s technical departments and key stakeholders regarding product complaints and quality issues with incoming and outgoing goods in line with contractual agreements.Strategically initiate and implement city wide product recall procedures.Undertake and provide evidence of third party supplier premises food safety audits. Undertake Catering Leeds internal audits to ISO standard ISO 9001:#####.Write and deliver training programmes in specialist areas such as HACCP, Food Allergens, Special Diets, Food Safety, Religious dietary provision, Implementation of Food for Life Partnership.Provide advice, guidance and support across the service to ensure provision of healthy meals and special diets..Maintain a high level of confidentiality at all times and ensure all staff adhere to and understand how this relates to data protectionDevelop and deliver educational sessions and focus groups to children in schools as required.To ensure all staff carry out duties in accordance with Council Values and the Manger HabitsThe duties outlined are not meant as an exhaustive list and will also comprise any other duties within the spirit of the post commensurate with the job evaluation outcome for this post.RelationshipsThe Nutrition and Food Safety Manager will work closely with the Nutritionist and support the Head of Catering Leeds and Business Development Manager.
