Sommelier

About the role
This is our first opening into the UK, we’re currently in our pre-opening phase preparing to open not one but three concepts in the heart of London’s Belgravia! The Head Sommelier will take responsibility for the performance of the wine operation, leading a team of Sommeliers across our three luxury brands. We’re looking for a Head Sommelier with not only exceptional standards, but a commercial brain, ensuring that the wine function pays a major part in the success of our operations.

Key Responsibilities :
Wine and sake list development in line with the concept of all restaurants.
Purchasing, stock management, pricing, cost control, wine inventory control.
Ensure the wine and sake offering is seasonal, competitive and gives value to our guests.
Manage shifts /rota and co-operate closely with colleagues and other departments to ensure an efficient, professional and friendly service is delivered to our guests.
Work with Head of Wine and Beverage on any staff issues or guest complaints that arise on-shift, always ensuring guests’ experiences exceed expectations.
Ensure the wine cellar in a clean and presentable manner including overseeing the completion of cleaning checklists.
Work with Management team to review effectiveness of internal systems and how the wine department operates, offering solutions where appropriate.
Responsibility for wine sales targets and maintaining high service standards, health, and hygiene within the restaurants.
Essential Skills & Requirements:
Proven experience as a Head Sommelier in a reputable dining establishment, demonstrating a solid understanding of wine regions and varietals.
Strong communication skills and the ability to engage with guests to provide memorable wine experience.
Attention to detail and a commitment to maintaining the integrity of the wine program.
WSET Level 3 certification
