Studio Paskin is expanding into West London with the opening of The Barbary Notting Hill. We seek an experienced Head Sommelier to lead our Wine team and join us for the launch of our most ambitious restaurant project to date and what will become the flagship site of The Barbary brand.
The Position
We are looking for a Head Sommelier to lead on The Barbary Notting Hill wine programme and inspire, teach and train the front of house & bar team on exceptional wine service. Our Head Sommelier will lead the team on a list built from modern day classic producers, sourcing from a blend of well-known artisans from around the world such as Eben Sadie, De Moor, Thierry Allemand as well as newcomers from Central Europe and the New World. We will source from Les Caves de Pyrene, Modal, Indigo, Nekter, Basket Press Wines & FMV.
You’ll be an established hospitality professional who will play a crucial role in curating and delivering an exceptional dining experience for our guests.
Potential Groupwide opportunities to work on the development of the wine programme across Studio Paskin, (including The Palomar, The Barbary, The Barbary Next Door, The Blue Posts & Evelyn’s Table).
The Candidate
Highly trained with a strong understanding of the classics.
Excellent understanding of the London wine scene and industry trends.
A confident and vibrant personality who thrives in the buzz of service.
Passionate about detailed hospitality, guest experience and dedicated to exceptionally high standards of service. The ideal candidate will inspire this commitment in others.
A strong & experienced leader. Our Head Sommelier will lead on wine training for the Front of House team. You’ll be an excellent communicator with a forward-thinking approach to management and training.
Strong business acumen with a solid understanding of financials, previous evidence of achieved targets and an entrepreneurial mindset and proactive approach to profitability.
Experience of the pace and demands of a new opening is highly desirable.

The Restaurant
Featuring a re-imagining of the iconic Barbary horseshoe kitchen counter, the 75-cover affair will also include a dining room and dedicated cocktail bar, as we bring the Barbarian experience to the Notting Hill neighbourhood. The menu finds its origins in the beloved elemental cooking of The Barbary, whilst breaking new ground to offer an elevated dining experience.
