Job Role: Head of Patisserie
Salary: 100k
Food Style: High-volume, retail and bakery products
Sites: 10-20 plus expansion
Report to: Managing Director
Locations: London + National
Key Details :
High-volume, top quality high-street brand
Lead new product development across the group.
Lead the Food team of executive chef and operations chefs.
Looking for growth in food sales and new ideas in bakery and patisserie
Expansion plans and roll out of the brand with new funding.
Aspect of food development, and menu launching
Food standards and spec sheets for the group
The Role:
Menu launches from Idea to implementation.
Strategic analysis internal and external on pricing and sales
Presenting a brief for sign off by MD.
Oversee all costings, allergens, systems.
Launch packs for new menus including spec cards.
Manage supply chain day to day and troubleshooting, also optimise for GP.
Regular supplier meetings & benchmarking
Procurement: supplier tender, selection and negotiation – supported by finance
Experience Required:
Experienced as head of patisserie, head of bakery or culinary director.
Wide industry knowledge of food trends
Creativity in new pâtisserie products
Supply chain & procurement knowledge.
Strong financial acumen, driving revenue growth and maximizing profitability.
Power point & Excel
Analytics of data, sales mix
Supplier negotiation and contracts
Organisation & presentation skills
Ideal location and base - London
