KEY RESPONSIBILITIES:
Working with the Regional Chef, some of your responsibilities will include:
Executing menu items according to company specifications in both prep and line areas Direct culinary operations on a shift basis under the guidance of the Chef to ensure a clean, organized, and successful kitchen with a focus on fresh ingredients and quality control.To direct and control the Culinary Operations of the restaurant at an excellent level while maintaining and abiding by all standards, policies and/or procedures set forth by our company Managing sales and profit budgets developed by you and your Regional Chef. To maximize long-term profitability through excellent leadership. This includes, but is not limited to maintaining high morale within your team and executing/driving excellence in food quality, food preparation, cleanliness and the ongoing skills of your crew and management within the kitchen. Consistent attention to developing others. Being part of hiring process, including training, scheduling for multiple positions. Inventory and inventory management. Expert scheduling. Managing and submitting periodic weekly and monthly reporting regarding labor cost, food cost, etc.
KEY REQUIREMENTS:
Previous leadership experience in a full-service premium casual dining restaurant concept. Proven leadership skills: desire to develop and motivate the people around you to always be their best. Energetic and positive. Excellent culinary production skills. Able to provide consistent culinary and leadership direction during high revenue periods. You thrive under pressure in a fast-paced environment. Committed to being inclusive and embracing diversity. Providing leadership, training and ongoing morale for a large culinary crew. Identifying skill and leadership potential in your crew and developing those exceptional individuals into management roles within our company. Full kitchen execution and managing quality assurance during high revenue periods.
QUALIFICATIONS & EXPERIENCE:
Previous experience managing a large culinary team in a high volume, fast paced environment. Previous experience managing the culinary team of a Premium Casual or Fine Dining restaurant. Food Safe Certified. Red Seal Certified is an asset. Experience with projection and management of inventory, food cost, labour, variable costs, prep charts, other.
