Wise Employment are currently looking for a Sous Chef. You will be reporting directly to the Head Chef and deputise on their behalf in their absence. You will be responsible for the smooth and efficient running of your shift ensuring both restaurant and banqueting services are running effectively by planning in advance and having a methodical approach to running a busy kitchen. 

The ideal candidate will already be a Sous Chef or Chef de Partie with extensive experience, ideally in a hotel environment but experience in a busy restaurant and large scale banqueting is essential. 

You will be flexible, reliable, enthusiastic with a passion for hospitality and be able to work in a team and also independently with excellent organisational skills and experience of stock management.

As Sous Chef your duties will include


  • To assist the Head Chef, create menu items and dishes to the highest standard of food quality and hygiene.
  • You will oversee a section and be responsible for the management and quality control of said section according to the guidelines set by the Head Chef.
  • You will be expected to lead the kitchen in the Head Chef’s absence. Leading by example in composure, punctuality, skill, organisation, etc.
  • To maintain a sense of imperturbability.
  • You will be expected and invited to take part in creative opportunities to develop future dishes and menus and to bring your own ideas with you.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
  • Maintains a clean and sanitary work area including tables, shelves, grills, broilers, fryers, burners, grill and refrigeration equipment.
  • Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, labels, stores and rotates all products properly.
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Performs other related duties as assigned by the head chef or manager-on-duty.

In return our client is offering a salary of £29,000 per hour for a 40 hour working week.
