Blue Arrow are looking for a Sous chef to work at a well known privately owned 5* hotel, spa and golf course on the outskirts of Newcastle.
This is a permanent position due to start asap with interviews taking place straight away.
The business is now in need of a Sous Chef to join the existing team within the Kitchen team. As a Sous you work on all sections of the kitchen, ensuring that the produce is prepared to the agreed standard, cleaning your section down daily and passing any required orders to the Head Chef to place with the suppliers. A strict adherence to our HACCP principles is a must, from fridge management and date labelling to effective vacuum packing and blast chilling. Whilst the Head Chef is the creative force for all menus, you will be expected to contribute menu ideas for each new menu.
Rates of pay £17.50 per hour plus tips, minimum 45 hour contract
Working various shifts between 05:00 and 23:00 Days of work will be Monday to Sunday, working a 45 hour week.
Duties include:
* Food prep, production, and delivery - large volume
* Delegating to catering assistants / kitchen porters as required
* Communicating with the team to ensure smoothness of service
* Maintaining high standards of cleanliness throughout the kitchen
* Meeting all on site health and safety requirements
* Stock control
The ideal candidate will have 5-6 years industry experience and will be an existing Sous Chef or aspiring Junior Sous Chef, you will have worked in a rural Hotel setting previously and cooked at a minimum two AA rosette level for a minimum of two years as Sous Chef or Junior.
