Sitting in the heart of Kensington, DoubleTree by Hilton has embarked on a transformation with its exclusive secret garden hosting the capital's private parties, and its award-winning afternoon tea menu and in summer 2024 the hotel saw the launch of its innovative pan asian Umami restaurant. We are seeking an experienced Head Chef who can lead our F&B department and deliver a benchmark in culinary experiences synonymous with the DoubleTree brand. You are a consummate professional who mixes confidence and empathy when serving our guests while demonstrating calmness and a bias for action in a busy restaurant business. Our Head Chef should also be an inspirational leader and mentor to our international team, underpinned by a desire to nurture top talent and drive commercial success for the hotel. Overall responsibility for daily operations in the kitchen
Own your kitchen keep on top of supplies and equipment, and minimise waste
Liaise with the hotel management team about any unsafe equipment or safety incidents
Help create a safe space by following our safety procedures and wearing necessary protective equipment
Ensure self and team send out high-quality food on time every time
Be cleaner than clean meet or exceed UK food hygiene regulations to ensure we achieve 5-star Scores on the Doors.
Help with washing up and other kitchen duties when needed
Produce Menus and new dishes
Managing, training and recruiting of brigade of chefs
Ensure controls are in place for food and labour management
What we need from you
Previous experience as a head chef within an event catering company, banqueting, hotel or restaurant
Good IT skills to calculate food costs, enter and cost labour schedules
Ability to guide and manage a team
Be a creative chef who is always thinking of new ideas; passionate about food
Excellent communication skills
Flexibility to work some weekends and evenings
Long term future in the business is wanted.
Compliant as well as meeting local laws on food handling.
