Head Fishmonger

Head Fishmonger required for an establishment opening, they will be using a wide range of amazing fish, all the fish will come whole. The fish will be filleted on site for the retail counter, it be used by the sushi chef and also the wholesale customers too. you must be great at presentation, as your fish counter must look stunning. head fishmonger, 45-50k. be part of something new.

The role
As the Head Fishmonger for this unit, you will be responsible for the whole fish that are delivered, you will ensure that they are stored correctly and the filleting is done on the various fish. You will ensure the fish are cut correctly and the fishmonger fridge display looks amazing. They also sell some fish to restaurants on a wholesale basis. This role will include all the standard fishmonger duties and will include whole fish, including some large fish types.

Experience
We are looking for a fishmonger with experience of whole fish filleting, you will be able to do the various cuts of whole fish. They will have a great range of fish, you must be able to handle various types. You will have great knowledge of fish and knife skills
